Semi-roasted coffee (denatured coffee)
Green coffee subjected to a heat process whose purpose is a sanitary and phytosanitary control that guarantees sterilization and differentiation (by color) from other raw materials. From a regulatory point of view, it entails a weight loss percentage not higher than 10% during the heat process. Like green coffee, it cannot be consumed directly.
Barely dried / Aired coffee
Coffee that has undergone a drying process, but very incipient.
Dry parchment coffee
The product of coffee post-harvesting, that is, removing the skin and mucilage, washing (wet milling) and drying it until reaching a 12% moisture content. / Coffee sold by producers in Colombia. Water content is between 10-12%.
Pasilla (low-grade coffee)
Coffee beans that show defects such as CBB, sour, black, broken or splintered beans. / Coffee byproduct obtained in the milling process (which can be machine-made or manual). / Sometimes, coffee that comes off the tree before harvesting and is collected directly from the ground.
Organic coffee
This coffee is grown without using chemicals such as fungicides, herbicides, insecticides and fertilizers, which are replaced by organic fertilizers, often generated by the very coffee farms.
Black coffee
Coffee drink either sweetened or without sugar, but without adding milk, cream or other ingredient.
Ground coffee
After roasting, the coffee beans are ground before making the beverage. There are three main grinds: coarse, fine and medium, which refer to the size of the resulting particles. The grind selected will depend on the preparation method or the coffee maker used for the final brewing.
Wet/drained coffee
Parchment coffee with high moisture content, usually in the final stage of wet milling (washing).
Freeze-dried coffee
Soluble coffee produced by freeze drying, which is the ideal process to preserve the attributes of flavor, aroma and perfect balance of coffee. It consists in freezing the liquid coffee extract.
