The Near Infrared Spectroscopy (NIRS) technology provides a measure that can be treated as a spectral fingerprint that identifies the origin of Colombian coffee, even at regional level. The construction of the database and chemometrics models that feed this technological tool has been a key element in construction of and support to Protected Designations of Origin for Colombian coffee.
